Hearty Vegetable Soup
HEARTY vegetable soup - i added beef cubes & osso buco
So easy to pull together and simmer for hours to get the flavour
INGREDIENTS :
raw vegetables - anything and everything goes
optional: cubed beef, osso buco, chicken, chuck steak
stock - from cooked chicken or silverside - if you dont have any made then bought stock is fine.
in this recipe i used mushrooms, celery, carrot sweet potato, potato, bok choy, onions, cauliflower.
METHOD:
anything and everything goes - chop raw vegetables into approximately 3-5cm chunks and put into a stock pot.
optional: any meat suitable for soup such as chicken or chuck steak. i added cubed beef and osso buco to the pot.
now add enough stock to cover the vegetables.
bring to the boil and simmer for 3-4 hours - the stock will reduce as it infuses into the vegetables.
Notes:
in this recipe i used mushrooms, celery, carrot sweet potato, potato, bok choy, onions, cauliflower.
i added stock from the juice of a cooked silverside that V did a few nights before. if you have chicken stock or bought stock this is that little 'something' that lifts the soup.
