tasty fritters using up leftover rice

Spanish Rice Fritters

i used leftover fried rice - add your own extra ingredients to create something yummy

1 cup cooked rice (I used leftover fried rice)

1 egg

1/2 cup flour

1/3 cup soda water

1 onion - finely chopped

1 clove garlic

1 carrot - grated

2 T fresh parsley

grated cheese (to suit) and oil to fry in

METHOD :


  • in a bowl, place 1/2 cup flour and make a well in the middle

  • crack in one egg and whisk

  • add 1/3 cup soda water and whisk to a creamy batter

  • add one onion finely chopped, 1 clove garlic, 1 carrot grated and 2 T fresh parsley

  • add 1 cup of cooked rice and grated cheese

  • mix together well - must be a nice loose batter not too thick

  • heat a large frypan to a medium heat and add olive oil 

  • when oil is nice and hot - not smoking - add batter by the spoonful with space in between

  • 2-3 minutes per side until golden fried

  • transfer to paper towels - continue until all fritters are done.
